Starch is a complex carbohydrate extracted from plant sources such as grains (e.g. corn, wheat), potatoes, and legumes. In baking, it acts as a crucial structural and thickening agent: upon heating, starch granules absorb water and swell (a process called gelatinization1), which thickens the mixture and sets the crumb structure of breads and cakes.
