Working Method

Main Ingredients
  • Mixing Spiral: 5mins 1st speed, 5mins 2nd speed.
  • Dough temperature: 25-26℃
  • Bulk fermentation: 30mins
  • Scale: 200g
  • Intermediate proof: 20mins
  • Make up: Roll out the dough. Spread custard filling, sprinkle with cranberry. Long Shape.
  • Final fermentation: 60mins at 28℃,80% RH
  • Before Bake: Sprinkle crumble and almond flake.
  • Oven temperature: 200℃
  • Baking time: 20-25mins

  • Mix all ingredients until form a crumble dough.

  • Whisk water and Cremyvit Classic on high speed for 1-2mins.
