Working Method

Coffee Plant-Base Cake
  • Mix all ingredients together (except Nescafe and Belcolade Selection Noir K-10 around 2-3mins.
  • Then add in Belcolade Selection Noir K-10 and Nescafe and mix well.
  • Baked at 180°C around 25-30 mins.

Milk Chocolate Coffee Panna Cotta
  • Boil coffee and oat milk and add into Belcolade Selection Plant-Based CT.
  • Use hand blender to mix until the chocolate is melted, and then follow by gelatine mass.

Milk Chocolate Chantillly Cream
  • Boil the oat milk and add into Belcolade to make ganache.
  • Semi whip Ambiante cream and gently fold into ganache mixture.
  • Lastly melt gelatine then incorporates into the mixture.

Passion Fruit Carrot Compote
  • Mix pectin and sugar.
  • Boil passion fruit puree and add sugar.
  • Add the carrot into boil passion fruit puree and keep it boil for 2mins.

Plant-Based Bread Croutons
  • Slice the plant-based toast into 12cmx1.5cm.
  • Baked at 150°C double tray around 15-18 mins.
