  • Mixing Spiral: 10mins at 1st speed, 5mins at 2nd speed.
  • Dough temperature: 25-26°C
  • Bulk fermentation: 10mins
  • Scale: 1500g
  • Intermediate proof: Keep in freezer 40mins
  • Make up: Single fold, sheet to 4mm,use cutter cut a donut shape
  • Final fermentation: 60mins at 28°C, 80% RH
  • Fire temperature: 180°C
  • Fry time: 1min
