Working Method

Snow Skin
  • Mix snow skin premix with shortening until combine.
  • Add in water and mix well become a non-stick dough.
  • Add red food colouring.
  • Let it rest for 5 minutes.

Triple Berry Filling (Center Filling)
  • Pipe Topfil Raspberry into the mould and let it freeze.

Triple Berry Filling (Mousse)
  • Mix Vivafil Strawberry and water together.
  • Melt gelatine mass, add into Vivafil Strawberry mixture and mix well.
  • Whip Ambiante and whipping cream together until soft peak.
  • Fold into Vivafil Strawberry mixture.
  • Add Smoobees Blueberry and mix well.
