Florentine Top Cookies


Working Method
  • Whip the butter until soft
  • Add in all the ingredients and mix until a dough is formed
  • Sheet the dough on the laminator machine to number 4
  • Next, melt the butter
  • Then incorporate all the ingredients together
  • Bake at 180°C top & bottom for 30mins
  • Crumble it into small pieces
  • Spread almond paste on to cookie dough & sprinkle croquant on top .
  • Use a rolling pin , roll the croquant evenly
  • Cut the cookie dough into 4cm x 4cm and bake at 160°C for 18 mins
