Working Method

Working Method
  • Over a double boil, stir the eggs and sugar continuously until the mixture reaches 80˚C.
  • Beat the mixture till pale and fluffy.
  • Add in expresso.
  • Fold in whipped cream to mixture. 
  • Pour into desired popsicle mould and pipe Cremfil Roasted Brown Sugar into the middle. Cover and place in popsicle stick.
  • Freeze overnight.
  • Melt Belcolade Dark Chocolate together with oil.
  • Remove popsicle and dip into melted chocolate.
  • Quickly sprinkle desiccated coconut onto the popsicle and place back into freezer to set.
