Working Method

Moist Golden
  • Mix all ingredients together until homogenous.
  • Bake at 180°C for around 12-13 mins.

Namalaka Kaffir Lime
  • Soak the gelatine with water for 5mins.
  • Boil Kaffir lime juice.
  • Boil the milk and add into Belcolade Blanc Selection CT and lime juice.
  • Immediately using hand blender to make a perfect emulsion.
  • Add in cold whipping cream then mix again.
  • Leave it overnight in the chiller.

Ivory Cheese Mousse
  • Soak the gelatine with water for 5mins.
  • Semi whip the whipping cream.
  • Bring the milk to boil; pour into the Belcolade Blanc Selection CT, add in the Deli Cheesecake.
  • Gently fold the cream into the mixture and last incorporate the gelatine.
