Passion Fruit Aloe Vera


Working Method

Moist Golden
  • Mix all ingredients together until homogenous.
  • Baked 180°C around 12-13 min.

Hazelnut Crispy
  • Mix all the ingredients in a bowl with a spatula, spread the mixture in a thin layer on the baked crumble discs (75 g for each disc).

Passion Aloe Vera Jelly
  • Soak the gelatine with water for 5min.
  • Boil sugar and passion fruit puree, then add lemon juice and zest.
  • Put aloe vera into juice mixture and soak for 10 min.
  • Lastly add gelatine.
  • Pour the juice mixture into mould and put inside the freeze for overnight.

Strawberry Mousse Cake
  • Soak the gelatine with water for 5min.
  • Boil strawberry puree and add Vivafil strawberry and lemon juice.
  • When strawberry reach around 27°C and then gently fold the cream into mixture.
  • Last melt gelatine and incorporate into strawberry mixture.

Miroir Glaze
  • Warm the Miroir and colour around 45°C and add gold leave.
