Working Method

Moist Golden
  • Mix all ingredients except Deli Citron together until homogenous.
  • Pipe Deli Citron on top of the cake batter
  • Bake at 180°C for around 12-13 mins

Hazelnut Crispy
  • Use a spatula to mix all ingredients together in a bowl, spread a thin layer in the baked crumble disc mould.

Thai Sweet Basil Cream
  • Soak the gelatine with water for 5mins.
  • Semi whip the whipping cream(500g).
  • Cook milk, cream, sugar, and yolk together until 82°C.
  • Cool down the mixture till around 65°C, add in Thai sweet basil and blend with hand blender.
  • Gently fold the cream into mixture.
  • Last add in the melted gelatine.

Chocolate Spray
  • Melt all ingredients together until chocolate is melted.

Thai Sweet Basil Jelly
  • Soak the gelatine with water for 5mins.
  • Boil water, vanilla stick, sugar and fresh thai sweet basil and let it infuse for 10mins.
  • Lastly add in gelatine mass and gold leave.
