Caramel Apple Slice Cake


Working Method

Cake Base
  • Mix cake mix, water, oil and egg yolks together until well combine.
  • Whip up egg white and sugar on medium speed till soft peak. (meringue)
  • Fold in the meringue into cake batter.
  • Bake at top 200°C bottom 180°C for about 15-18 minutes depends on size.

Cheese Layer Filling
  • Mix deli cheesecake, deli citron and water together.
  • Whip up Ambiante and Whipping Cream together until soft peak.
  • Fold it with deli cheesecake mixture.
  • Melt the gelatine mass in a bowl, mix small portion of the deli cheesecake mixture with melted gelatine mass, then add it back into the mixture and mix well.

Caramel Ganache
  • Boil the cream, pour into deli caramel and mix well.
  • Heat the caramel mixture again to 75°C to 80°C.
  • Pour into Belcolade Selection Lait Cacao-Trace, and hand blend.
