Working Method

Cake Base
  • Mixing: Mix all ingredients together in medium speed for 2 minutes.
  • Baking: Bake at 180˚C for about 14-16 minutes

Five Spice Crumble
  • Mixing: Mix all ingredients together in medium speed until crumble like texture.
  • Baking: Bake at 180˚C for about 14-16 minutes.

Mango Cremeux
  • Mixing: Mix and cook the mango puree, sugar and eggs until boil.
  • Add the gelatine and strain everything.
  • Once the mixture reach the temperature of 35°C – 40°C, add in the butter and mix with a hand mixer.

Caramel Coffee
  • Mixing: Melt the Belcolade Lait and add into Expresso then slowly add into Deli Caramel
  • Semi whip the cream and incorporate into the coffee caramel base.
  • Last add in gelatine.

Yellow Glaze
  • Warm both glaze with microwave till 40˚C – 45˚C.
