Working Method

Cake Base
  • Mix all ingredients with paddle for 3-5 minutes until homogeneous.
  • Bake at 180˚C for 15 – 20 minutes, depends on size.

Blueberry Jelly
  • Mix Topfil Wild Blueberry with water.
  • Melt gelatine mass. Incorporate a bit of Topfil Wild Blueberry with gelatine mass, then pour back into the mixture, mix well.
  • Pour on a tray and let it set.
  • Cut out the shape as the insert of the mousse.

Lemon Mousse
  • Heat up the Deli Citron, water, lemon juice and sugar in the pot until sugar dissolved. 
  • Melt gelatine mass, add into Deli Citron mixture, mix well. Let it cool down till 35°C to 40°C.
  • Whip up the whipping cream until soft peak form and fold into Deli Citron mixture. Lastly add in Smoobees Lemon and mix well. 
  • Pour the mousse into the silicone cake mould and followed by blueberry jelly and cake base.

Yellow Glazing
  • Warm all ingredients together till around 37°C to 40°C.
  • Cool down till 28°C. Then glaze on top of  the cake and décor the cake as desired.
